Fusion offers a Gamebird Menu for Duck, Pheasant, Quail, Goose, Pukeko and Swan.
Dishes will be discussed & designed with each group depending on their requirements & what gamebirds they provide. |
Previous dishes have included Spicy coconut laska with vegetables,noodles, picked pukeko & asian slaw. Manuka smoked breast of mallard with beetroot & horseradish remoulade. Roulade of roast Canada goose with potato mash, red wine pan gravy & brussel sprouts. Paella styled rice with vegetables, spicy chorizo sausage, olives & shredded roast duck
Birds must be presented to us at least 24 hours before required & cleanly dressed
